Wounded Knee is a blend of music and talk. Local writer and thinker Duncan Riches invites guests in each week to talk about sport, life and the wonders of Wilton’s Cafe. Tele Geto

July 13th, 2010


IMG_2106Late this afternoon we were joined by John Cussans and Kirsten Cooke, who talked on and around the upcoming Tele Geto exhibition.

Tele Geto was created by Ti Moun Rezistans, the children of the Artiz Rezistans community of Grand Rue, Port-au-Prince, Haiti during the Ghetto Biennale which took place there in December 2009. In 2010 they have been working on a joint project with children from London’s East End, sharing video documentation of their lives via the internet, setting up their own blogs and will be showing their work in two exhibitions at the Portman Gallery in Morpeth School. The first of these exhibitions will take place between 15th July and 20th, the second in October. What’s Cooking?, Vol. 7

What’s Cooking? is taking a break for a while whilst Jessica explores Berlin.

Before she left, Jessica took a trip to West Mersea to visit Richard Haward of Richard Haward’s Oysters. She took a ride out on his boat, explored the farm and finished the day off with a delicious seafood platter in The Company Shed – the seafood bar run by Richard’s wife Heather.

The Haward family have been growing oysters in the shallow creeks from the river Blackwater to the west of Mersea Island, Essex since 1792 when William Haward sailed to deliver oysters to Billingsgate Market.

For at least one hundred years they have nurtured the same stretch of Salcott Creek, producing the very finest Colchester Native and, latterly, Gigas (rock) oysters.

We originally tasted – and fell in love with – Richard’s oysters at Broadway Market, where he has a stall each week. We recommend you visit  the market and sample the oysters yourselves (if you can’t get to West Mersea).

They’re currently number one on our list of essential summer snacks.

The London Fields

We recently had the pleasure of spending the morning with Bruno Davey of The London Fields. Bruno – quizzed over coffee by friend Pat Long – brought along two other members of The London Fields, Robin Sherwood and Frances McCulloch, to treat us to some live songs.

The London Fields:

The London Fields is a band from Hackney. People say they sound like Spiritualised or The Velvet Underground, with a bit of Bruce Springsteen. Their first album, This is Yours – words painted on the side of the London Fields Lido before it was refurbed – was made with the assistance of friends and neighbours who helped the band record songs, or donated materials like the CDs and cereal packets needed to make 500 handmade albums. Some people even came and made sleeves at a couple of Sunday afternoon BBQs. Wanting to give away their music for free The London Fields have left 500 copies of This is Yours around Hackney. Some have been tied to park railings, others hung in trees, a few released on balloons. London Fields Radio has recently teamed up with Leanne Elliott and Ita Maude Wooller of RART, to bring you a new fortnightly podcast.

RART work as a semi fictitious collective of emerging and established artists, writers and tartan designers based in London and beyond. It exists through art works, exhibitions, serious thought, informative parties, helping, art instruction, rants and happenings. RART ORDER is the experimental adult education facet and R-art is the outstanding art education element for the baby youth.

What’s Cooking? at Broadway Market

What’s Cooking?, Vol. 5

For the fifth show in the series Jessica instructs listeners on how best to cook Liver and Bacon. For the ingredients and method, as well as the playlist, see below.

Liver and Bacon

Ingredients:
1 pack of lambs of Calves liver
3-4 rashers of smoked bacon or bacon pieces
2 red or white onions
2-3 garlic cloves
Sprig of rosemary
Sprig of thyme
2 small carrots
Plain flour
Salt and pepper
Glass of red wine (optional)
Meat or vegetable stock (water will do if you don’t have any nice stock handy)
Olive oil or other cooking oil
New potatoes

Method/Preparation:
1.Peel and chop the onions. Heat some oil in a frying pan and start to soften the onions on a medium heat.

2.Now peel and slice the carrots and cut the bacon into small slices and add to the pan. You can also start steaming the new potatoes at this point. Put a full kettle onto boil and get the steamer or pan ready.

3.Add the garlic. While this lot is softening you can chop the herbs you have chosen and add them to the pan.
4.Its time to start preparing the liver. Chop it into generous bite sized chunks and place in a ceramic mixing bowl. Once you have done this you need to cover the liver in flour. Sprinkle some over and mix with your hands. Add more until all the liver is covered nicely with the flour.
5.Now transfer the softened veg and bacon onto a plate and wipe the pan clean. Give the pan a generous slosh of oil and turn the heat up. Once the oil is hot you can start to sear the chunks of liver.

6.Once you have seared the liver you can add a slosh of red wine into the hot pan if you like. You can now add the veg. and bacon to the pan. At this point you’ll also add some liquid to help make your sauce, whether it’s stock or water.

7.Now leave the liver to cook gently. This will take around 10-15 mins. I like my liver pink in the middle so keep checking the liver so that you don’t over or under cook it. If you need more sauce you can mix some plain flour with cold water in a glass. Add this to the pan while stirring so that it thickens smoothly and doesn’t form lumps.

8.You should have a stew like consistency, with the liver coated in a lovely gravy. Add salt and pepper to taste.
The potatoes should be done now. Just drain them and then serve crushed next to the liver and bacon. Serve with greens.

What’s Cooking?, Vol. 4

Afternoon,

This week Jessica decided to celebrate the sun with a summery Lemon Tart, and a collection of delicious tracks. Do enjoy…

Sable Pastry

Ingredients:
125g butter at room temperature
125g icing sugar sifted
2 eggs beaten
3 tablespoons double cream
310g plain flower sifted

Method:
1. Gently cream the butter and the sugar.

2. Add the eggs slowly, mixing well.

3. Add the cream.

4. Add the flour all at once and mix to a smooth paste.

5. Divide the dough in half. Wrap separately in clingfilm and store in the fridge.

Lemon Tart

Ingredients:

300g Sable pastry (as above)
1 egg, mixed with 2 egg yolks, to glaze
4 lemons, juice of
165g caster sugar
6 eggs
350ml double cream
2 lemons, finely grated zest of
A little icing sugar

Method / Preparation:
1. Roll out the pastry to 30cm square, 3mm thick.

2. Line a 20cum tart ring with the pastry and place a circle of greaseproof paper on top. Half fill with baking beans.

3. Bake in the oven preheated to 180C for about 20 minutes, then remove the beans and paper and cook until the pastry base is golden.

4. Remove from the oven, brush the pasty with the egg and yolk mixture and return to the oven for about 2 minutes to seal. Set aside.

5. Make a syrup with the lemon juice and sugar.

6. Pour the lemon syrup over the eggs in a bowl and whisk.

7. Bring the cream to the boil and whisk into the mixture.

8. Pass the mixture through a fine sieve on to the lemon zest in a bowl and skim of any froth from the surface.

9. Pour the lemon cream into the pastry case and bake in the preheated (180C) oven for 20 minutes. Check after 10 or 15 minutes. Remove from the oven and leave to cool, then chill in the refrigerator until set.

10. Dust the tart with icing sugar.

11. If you have the sue of a blow-torch you can caramelize the top lightly.

What’s Cooking?, Vol. 3

Dear food lovers,

Jessica Horniblow is back with What’s Cooking? This week she cooked up a delicious Nut Curry and Pete, Wilton’s talented Barista (and cook, so it seems), sat in for the last part to give us the recipe for the cafe’s Poached Pears with Vanilla.

This weekend Jessica is heading down to Broadway Market in Hackney to speak to stall holders and shoppers. The trip will be the first in a number of visits to markets across London, and we’ll be sharing all of our findings with you, so stay tuned.

Nut Curry

Ingredients:
2 carrots
3 sticks of celery
Half a cauliflower
2 cloves of garlic
Parsley or coriander
Peanuts or cashews (a good handful)
Fresh or dry chilli
3 heaped tablespoons of ground almonds
Small pot of soured cream
Spices – turmeric, cayenne pepper, cumin, garam marsala
Groundnut oil (or any cooking oil)

Method/Preparation:
1.Peel and chop carrots into biggish chunks. Do the same with the celerey. Put onto the heat with some oil and about half a tumbler of water.

2.Wash and cut up the cauliflower into bite sized chunks. Peel and roughly chop the garlic (and fresh chilli if you’ve got some). Add to the pot.

3.Let all this simmer gently for about 5-10 mins. Now add the spices. You can use whatever you like really. If using the spices mentioned put about a teaspoon of each in and stir thoroughly. If you’re using dried chilli flakes put a pinch in now. The flavour of these will develop over time so don’t go overboard unless you’re tough and like it hot! Let these flavours soak in for about 5 mins on a low heat.

4.Wash and chop the parsley or corriander.

5.Now stir in the ground almonds, sprinkle in a good handful of nuts and then stir in a couple of tablespoons of the soured cream in. Let this heat through for a few minutes – then stir in the chopped herbs.

6.You may need to season with salt before you serve. Add to your taste.

7.This can be eaten alone or with brown rice or Naan Breads. If you want to serve it with brown rice remember that wholegrain rice takes longer than refined. Give it plenty of water and about 35-40 mins to cook.

London Fields Radio Introduces: Angelique Houtkamp

We recently had the pleasure of meeting Dutch tattoo artist, Angelique Houtkamp.

It was a wonderfully sunny day in Hackney and Angelique stopped by en route to the Nelly Duff gallery, where she is currently exhibiting a collection of her work. We had a Q&A session over tea, and got to listen to a great selection of songs, handpicked by the lady herself.

Unfortunately we didn’t have time to play all of Angelique’s songs – there was simply too much to ask her – but, because we care so much, we’ll list the tracks that were played along with the others that weren’t (but deserve to be).

What’s Cooking?, Vol. 2

Dear followers,

Jessica Horniblow joined us for the second in the series of What’s Cooking?, London Fields Radio’s new recipe show.

This week Jessica cooked, Eggs Benedict Royale. Simply delicious.

Eggs Benedict Royale

Ingredients:
2 eggs
2 egg yolks
110g butter (just under half a pack)
Two slices brioche bread
Smoked salmon
2 tablespoons lemon juice
2 tablespoons white wine vinegar
Bit of malt/white wine vinegar for poaching
Salt and pepper

Method/Preparation:

1.Gently heat the lemon juice and white wine vinegar.
2.Beat the yolks of two eggs, then add the lemon and vinegar in a thin steady stream as you whisk.

3.Melt the butter and put kettle on to boil.

4.Once butter has melted transfer into a jug and pour slowly into the egg and vinegar mixture while you whisk.

5.Add a slosh of vinegar to the boiling water in a wide base pan. Wait till it bubbles/simmers then break eggs into the water.

6.Leave for 30 seconds or so then turn of the heat and leave to cook in the water.

7.Put two slices of brioche on to toast. Once toasted, place smoked salmon on top followed by a drained poached egg and as much hollandaise as you like. Season with pepper.

What’s Cooking?, Vol. 1

Jessica HorniblowHackney resident Jessica Horniblow took the seat to talk us through her delicious recipe, Smoked River Cobbler with Capers and Cream.

This is the first instalment of our step-by-step recipe show, What’s Cooking? that invites people to share their favourite recipes. Hosts talk listeners through their recipe step-by-step, leaving them to chop, peel and boil to their choice of ‘cooking music’.

Each time a What’s Cooking? podcast is put up, ingredients, along with instructions, will be available on the blog. That way, you can shop for the ingredients beforehand and refer to the instructions in moments of doubt.

Jessica’s Smoked River Cobbler with Capers and Cream

Ingredients:
2 Smoked River Cobbler fillets
1 onion
Fresh parsley
2 tablespoons capers
250ml cream
4 or 5 potatoes
Olive oil
Butter

Method/Preparation:
1.Start by scrubbing or peeling the potatoes and cut into quarters. Set to steam or boil.

2.Peel and chop the onion. Add to a hot-ish pan with a dash of olive oil and a small knob of butter. Soften the onions gently.

3.Rinse and pat dry the fish fillets. Place in the pan with the softened onions and let them heat through. Roughly chop the capers and add to the pan.

4.Pour the cream (saving a little for the mash) over the fish and season with a twist of salt and plenty of freshly ground black pepper. Leave to cook on a gentle heat. Chop a sprig of fresh parsley.

5.Check the potatoes with a fork. If cooked through drain the water and put them back in their pan. Add a big chunk of butter, salt, pepper and a bit of the cream. Crush the potatoes with a masher or fork and sprinkle a pinch of the parsley over them and stir in.  If you like a creamier mash you can add some milk.

6.Add the rest of the parsley to the pan with the cream and the fish. The fish should be cooked now. It should come away quite easily from the rest of the body when pulled with a fork.

7.To serve. Warm the plates! Put a healthy dollop of mash in the centre of the plate. Put the fish on top of this and then spoon over some of the cream, onion and caper sauce. You could serve this with steamed/braised spinach or a tomato salad.

Videopia is an interactive club night that takes place monthly at the wonderful Notting Hill Arts Club, an evening of music & movie making frivolity! As London’s only club night that combines a dance floor with a makeshift movie set & a bar with a temporary cinema screen, Videopia is a haven for music lovers, film buffs & everyone else in between.

On Tuesday February 16th the Videopia crew will be following Goose and Maverick’s desire to “feel the need, the need for speed”, as they cast, shoot and screen the cheesy Hollywood favourite ‘Top Gun’ live on the night. After months of preparation we’re nearly ready to unleash London Fields Radio on the world.

Our beautiful little coffee shop on Wilton Way in London Fields is just about ready to open, and the musicians, DJs, artists and allsorts who’ve been clamouring to host their own radio show are waiting in the wings.

We’re not about rushing things, instead we’ll start with some choice podcasts and unbeatable coffee, and look forward to broadcasting good music and good conversation to London Fields and beyond.
